Coconut Barfi
Ingredients
- 1 cup (heaped)
- 1 cup
- 2 pinches
- 5
- 1 tsp
Method of Preparation
- Take a saucepan and fry the cashews until golden brown. Set it aside.
- Take a clean tray and grease it with ghee and set aside.
- In a saucepan, heat the coconut and sugar together. Stir properly.
- Stirring the mixture constantly on medium flame, cook the coconut until the sugar melts. Cook until the mixture forms a thick liquid.
- Cook until the mixture leaves the pan and starts forming whitish bubbles.
- Do not overcook or cook at high flame as it may change the taste and color of the coconut.
- Add the cashews and elaichi at last.
- Pour the thick liquid onto the already greased tray and level it with aluminium foil. This will give the barfi a smooth texture.
- Cut into small pieces when the barfi is still warm.
