Enchilada Pasta Bake

Method of Preparation
  • Heat oven to 375 F.
  • Cook the pasta as per instructions on the packet, omitting salt.
  • Meanwhile, in a large nonstick skillet heat oil over medium heat and add to it yellow onions and pepper. Cook for 3 to 5 minutes or until crisp-tender, stirring frequently.
  • Now stir in the seasoning mix and diced tomatoes. Cook for 3 minutes while stirring.
  • Add chicken, beans and half of the green onions and cilantro.
  • Mix well and remove from heat.
  • Now drain the pasta and add to the chicken mixture.
  • Mix lightly and pour into a 13 x 9 inch baking dish.
  • Top with cheese and bake in oven for 20 to 25 minutes or until the pasta mixture is heated through and cheese is melted.
  • Sprinkle with remaining green onions and cilantro.
