Fast Italian Fish

Ingredients

Method of Preparation
  • Heat oven to 218⁰C.
  • Trim the end of the zucchini and cut lengthwise into quarters.
  • Put on non-stick backing sheet, drizzle with olive oil and season with salt and pepper. Roast for 5 minutes. In oven
  • Wrap 1 slice prosciutto around each of the 4 fish fillets.
  • Remove the pan from the oven, flip zucchini and put on one side. Add fish to the pan and return to oven.
  • Roast until fish is just opaque and Zucchini are tender, about 8 minutes.
  • Remove in a plate and top each fillet with a little pesto.
