Spinach And Artichoke Baked Pasta

Ingredients

Method of Preparation
  • Cook pasta and drain pasta, removing ½ cup of cooking liquid
  • Heat the oil in a large skillet over medium heat; add the onion, 1/2 tsp each of salt & pepper. Cook, covered, stirring occasionally, until the onions are tender.
  • Add garlic and cook for 1 minute.
  • Heat broiler. In a bowl mix the sour cream, cream cheese, parmesan cheese, lemon zest, and juice.
  • Add this mixture to the onions.
  • Add the cooked pasta to the bowl and toss to coat.
  • Stir in the spinach and chopped artichokes along with ¼ cup of the cooking liquid.
  • Fold in1/2 cup mozzarella.
  • Transfer the pasta mixture to a broiler proof 2 ½- 3 qt casserole dish.
  • Sprinkle the remaining mozzarella and broil until golden brown.
