Barley and Nut Salad

Ingredients
  • 1 cup
  • 1/4 cup
  • 2 sticks
  • 1 Tbsp
  • 1 tsp
  • 1 medium
  • 1 medium
  • 1/4 tsp
  • 1/2 lemon
  • to taste
  • for garnish
Method of Preparation
  • Heat oil in a nonstick kadai.
  • Add cumin seeds and saut
  • Add barley and celery and mix well. Transfer into a bowl.
  • Finely chop cucumber and tomato and add to the bowl.
  • Coarsely grind the peanuts and add to the bowl.
  • Add crushed black peppercorns, lemon juice, and salt and mix well.
  • In the centre of a serving plate place a ring mould and fill it with the barley salad.
  • Press lightly and remove the ring mould.
  • Garnish with lemon slices and serve.
