Black Forest Pavlova

Method of Preparation
  • Preheat oven to 120°c/100°F
  • Grease and line a baking tray with baking paper.
  • Mark a 22cm circle on tray. Using an electric mixer, beat egg whites until soft peaks form.
  • Gradually add sugar, I tsp at a time, beating until dissolved after each addition.
  • Add cream of tartar, corn flour and vanilla.
  • Beat for 1 min or until combined.
  • Spoon meringue on to prepared tray and using a palette knife shape them into circles and bake for 1 hour or until firm.
  • Turn oven off and cool in oven with door ajar.
  • Just before serving top with Pavlova ice-cream and garnish with cherries and coconut.
