Chocolate Kaju Barfi

Ingredients
  • 1 cup
  • 1 1/2 cup
  • 1 tbsp
  • 1/4 tsp
  • 1 tsp
  • 80 ml
Method of Preparation
  • Clean the cashew nuts and crush them into a fine powder in a blender. But before you powder them, make them crunchy by roasting them in the microwave for 2 minutes. Stir them every 30 seconds.
  • In a saucepan, add 1 cup cane sugar, 1 tsp vanilla extract or ¼ tsp cardamom powder.
  • Add 80 ml water and mix well. Bring this to boil on low flame.
  • Once the mixture begins to boil, stir the mixture well and make it boil for a minute. It should boil rapidly.
  • Now add the powdered cashew nuts. Take the pan off the heat and keep it on the platform.
  • Mix the cashew powder thoroughly to avoid lumps. Stir and stir until you see only a smooth paste.
  • Now add the cocoa powder and strain it through a coffee strainer. Sieve it over the cashew mixture.
  • Mix it properly for a few minutes to avoid lump formation.
  • Now put the saucepan back on the gas and cook till the mixture thickens considerably, and starts leaving the edges of the pan.
  • Now, take a little portion and try rolling it into a ball. It should be soft, and non-sticky as it cools.
  • In the meanwhile, remove the saucepan from the gas and transfer it over a greased butter-paper.
  • Knead the mixture while it is still warm and cover it using another butter paper.
  • Roll it with a rolling pin to give it a uniform level.
  • Cut it into your desired shapes and then let the mixture cool.
  • Now remove them carefully and store in a nice air-tight container and refrigerate.
  • Offer to your guests and enjoy the compliments.
  • Note: Incase the barfii doesn’t set well, use a little milk powder and add it through a coffee strainer. This will help avoid lumps in the mixture. Grease your hands and then knead it well.
