Lavender with Honey Panna Cotta

Ingredients - For Panna Cotta
  • 250 ml
  • 250 ml
  • 1/2 Tbsp
  • 100ml
  • ½ tsp
For Pomegranate Reduction
  • 500 ml
  • 100 gms
Method of preparation - For Panna Cotta
  • Combine cream, milk and lavender in a saucepan. Bring to boil and then cover.
  • Simmer for at least 10 – 15 min until the lavender steps in.
  • Drain the lavender, but make sure to squeeze out all the liquid.
  • Next add honey to milk and whisk it lightly before you add the Vanilla.
  • Pour into miniature cups or serving ramekins.
  • Set in fridge overnight.
  • Just before serving pour on cooled pomegranate reduction, sprinkle on some pomegranate seeds,
For Pomegranate Reduction
  • Boil the juice with sugar, until it reduces to 1/3 of its quantity
  • Let it cool, and divide between the Panna Cotta.
