Orange, Asparagus and Endive Salad
Ingredients

Method of Preparation
- Add asparagus to a large pot of boiling water. Blanch it for 1 min. Drain and sink the asparagus into a bowl of cold water. Again drain and dry the the asparagus.
- Take a large bowl and mix into it the asparagus, oranges, red onion, and endive. In another bowl, whisk the canola oil, raspberry vinegar, sugar, orange suice and salt and pepper. Add this dressing to the mixture of asparagus and endive.
- Toss well, before serving the salad.
