Pasta with Pumpkin
- 250 g
- 400 g
- 50 g
- 60 ml
- 200 g
- 100 g
- 20 g
Method of Preparation
- Cook the penne and cubed pumpkin in a saucepan with water to cover, till the pasta is done.
- Drain and keep a cup of the cooking water.
- Crush the almonds coarsely.
- Heat a medium sized pan, add 60ml extra virgin olive oil and while the oil is cool add the onions and fry till they turn pink.
- Add pasta-pumpkin, almonds and season with salt and pepper.
- Add a few drops of the reserved cooking water.
- Grate over the pasta parmesan cheese and add fresh oregano/ thyme.
- Toss well and serve hot.
