Curd Rice – A Rice mixed with yogurt and seasoning

Traditional Curd-Rice

Ingredients
  • 1 cup
  • 1 cup (basic curd/ Indian curd / non-fat plain)
  • ¾ tsp
  • 1 fresh

Method of Preparation
  • Wash the rice and soak it in 2 inches of water for about 30 minutes.
  • Take a bowl and pour the yogurt into it. Add 3/4 tsp salt and whisk the mixture until you get a smooth creamy consistency.
  • In a bowl, add 12 cups of water and bring it to bowl. Add the rice and boil again for 12 minutes. Drain out all the water and transfer the rice into a big bowl. Add the yogurt and slowly mix them.
  • Mince the green chili or jalapenos (remove the seeds). Also cut the ginger cube.
  • Take a pan and heat the oil in it. Add the mustard seeds. When they start popping up, add the urad dal.
  • Once the urad dal turns red, add the curry leaves and 2 dried red chilies. Now lift the pan and pour the content over the bowl filled with rice and curd.
  • Sprinkle some freshly chopped cilantro, green chilli and ginger. Mix them gently and serve it at rom temperature.
  • If needed, add some salt, based on your taste.

Curd-Rice is one of the most soothing traditional recipes of the Asian sub-continent. The recipe is known for its soothing taste, cool effect and health benefits.

Tip: Urad dal and the curry leaves, work as a magical ingredient in the recipe. They have splendid flavors which can’t be left out. Cilantro also adds to the taste. Not including any of the ingredients can cause an imbalance to the taste of the recipe.
