Capellini Primavera

Ingredients

  • 3 cups (8 ounces)

  • 1/8 tsp
  • 1/2 cup
  • 1 cup
Method of Preparation
  • Melt the butter in a Dutch oven over medium heat. Saute the carrots, onions and broccoli in butter for 5 mins. Add the squash, mushrooms and garlic. Saute for 2 mins. Now add all the remaining ingredients apart from cheese and pasta. Stir all the ingredients well in the pan.
  • Reduce the heat to simmer and cook for 8 to 10mins, until the vegetables become tender and the flavors are well blended. Serve Capellini Primavera over cooked angel-hair pasta. Top it with grated parmesan cheese.
