Method of Preparation
  • Wash and chop the eggplants. Add salt and leave it for 50-60 minutes. Squeeze dry. Now, sauté the eggplant in oil until soft. Remove them with a slotted spoon and sauté garlic in the same oil. Add olives, tomatoes, and celery and cook them for 10-15 minutes. Now, add eggplant, pine nuts, and capers.
  • Take another pan and heat vinegar and sugar at medium heat. When the syrup is ready pour the eggplants. Cook it for another 20 minutes. Caponata is ready for your lunch or dinner.
