Champagne shrimp and Pasta

Ingredients

Method of Preparation
  • Bring to boil a large pot of salted water. Cook the pasta in the boiling water for 6-8 mins and drain. Meanwhile, heat the oil in a large frying pan over medium heat. Cook the mushrooms untim tender.
  • Remove the mushrooms from the pan and keep aside. Now mix the shrimp, champagne and salt in the frying pan. Cook over high heat. When the mixture begins to boil, remove the shrimp from the pan.Add shallots and tomatoes to the champagne and boil the liquid until it is reduced to 1/2 cup for 8 mins. Stir 3/4 cup cream and boil until the liquid is slightly thick for 2 mins. Now add the shrimp and mushrooms to the sauce. Heat it thoroughly. Add more seasonings according to your taste.
  • Toss the hot cooked pasta with the remaining cream and parsley. Serve a spoon of shrimp over the pasta and top it with the shredded parmesan cheese.
