Creamy Spinach And Mushroom Soup
Ingredients
- 220gms

Method of Preparation
- In a large pot, heat oil, add mushrooms. Cook for 5 min stirring occasionally until golden.
- Add spring onions, cook for 4 min, stirring until tender.
- Now stir in wine and simmer for 4 minutes until reduced to half.
- Add potato and 5 cups of water.
- Bring to boil and then simmer for 15 minutes or until potato is tender.
- Add peas and spinach stirring occasionally. Simmer for 3 minutes
- Allow the mixture to cool and then blend in batches until smooth.
- Return to pot and bring to a simmer. Add water is required.
- Remove from heat and stir in lemon juice.
- Season with salt and pepper to taste.
- Ladle into soup bowls and dollop evenly with hung curd.
- Garnish with lemon zest.
