Creamy Spinach And Mushroom Soup

Ingredients

Method of Preparation
  • In a large pot, heat oil, add mushrooms. Cook for 5 min stirring occasionally until golden.
  • Add spring onions, cook for 4 min, stirring until tender.
  • Now stir in wine and simmer for 4 minutes until reduced to half.
  • Add potato and 5 cups of water.
  • Bring to boil and then simmer for 15 minutes or until potato is tender.
  • Add peas and spinach stirring occasionally. Simmer for 3 minutes
  • Allow the mixture to cool and then blend in batches until smooth.
  • Return to pot and bring to a simmer. Add water is required.
  • Remove from heat and stir in lemon juice.
  • Season with salt and pepper to taste.
  • Ladle into soup bowls and dollop evenly with hung curd.
  • Garnish with lemon zest.
