Focaccia Versiliese

Method of Preparation
- Take a large bowl and mix yeast with water and leave it for 10 minutes. Mix rosemary, olive oil, sage, garlic and olive. Add flours and salt and mix it with a wooden spoon until you see the dough as thick and smooth. To harden the dough and also to make it pliable knead it by hand for 5 to 10 min.
- Wrap the dough with a clean plastic cover and leave it in an oiled container until it is double. Then take the dough out and spread it over a 10 inch flat baking pan. If it is not spreading to fit, leave it for another 10 minutes and then spread it over. Over the pan with a towel and leave it for 30 to 40 minutes or until half risen. Preheat oven to 400°F at least 30 minutes before baking.
- Before you start the baking, dimple the dough with your fingers and spread some salt over it (as per taste) and then bake it for 25-30 minutes. Take it out, be happy if it is golden, else bake it again for a couple of minutes. Extract it over a baking sheet onto a flat rack and let it cool for 10 to 20 minutes. Focaccia Versiliese is ready to serve.
