Gnocchi Alla Giordano

Ingredients

Method of Preparation
  • First, boil all the potatoes, then drain and peel them and finally process it through potato ricer. Mix flour, complete egg with an extra egg yolk, butter and salt with the potatoes. Keep this potato mixture on a flat board and press lightly. This will soften the dough. Roll the dough flat with the help of 1x10 inch thick and long stick. Cut them into 3/4" pieces (all rolls).Rub these dough pieces over the rough side of a good cheese grater. Now, take a large pot and boil some salted water, cook the ready small dumplings of potato and boil them till they surface on the top of the water.
  • Use a slotted spoon to remove the gnocchi and keep it in a warm bowl. Sprinkle some Parmesan cheese and splash some tomato sauce to taste. Gnocchi Alla Giordano is ready to serve.
