Lasagna Roll Ups

Method of Preparation
  • In a large pot bring some lightly salted water to boil. Add to this the lasagna noodles and cook for 5 to 8 minutes, or until slightly underdone. Drain and keep aside.
  • Next in a large mixing bowl, mix together grated cheese, ricotta cheese, tofu, frozen spinach and 1 cup parmesan cheese.
  • Pre heat oven at 350⁰F/175⁰C.
  • On a clean board, lay out a noodle and spread a layer of the cheese mixture on top, now add a thin layer of sauce and roll up the noodle.
  • Make a few more and place seam side down in a 13 x 9 inch baking dish.
  • Place the dish in the oven and bake for 30 minutes or until hot and bubbly.
