Risotto Alla Parmigiana
Ingredients

Method of Preparation
- Take a large straight−sided saucepan and heat oil and butter. Saute onion until light golden. Add the Arborio rice and mix it well. Put ½ cup of hot chicken stock in the rice and stir it continuously until the liquid is dry. Add another 1/2 cup of hot chicken stock and run the same process, keep repeating the process until all 6 cups of stock is used. This will make rice firm, moist and delicious, not runny and crunchy.
- Remove pan from stove and add Parmagiano cheese and some raw butter into it. Add some salt (as per your taste) and serve it hot. Delicious Risotto Alla Parmigiana is ready!
