Sizzled Green Beans with Crispy Prosciutto & Pine Nuts

Ingredients

Method of Preparation
  • Boil water in a large pot.
  • Add beans and return to boil. Simmer until crisp-tender, 3-4 minutes and drain.
  • In a large non-stick skillet heat
  • Now add prosciutto and cook while stirring until crispy, 4-5 minutes. Drain on paper towel and keep aside.
  • Wipe the pan and heat the remaining oil over medium heat. Add beans, garlic, sage, 1/8 tsp salt and pepper.
  • Cook until beans are browned in places. Stirring occasionally for 3-4 minutes.
  • Now stir in the pine nuts, lemon zest and the prosciutto.
  • Season with lemon juice, salt and pepper.
