Spinach And Artichoke Baked Pasta
Ingredients

Method of Preparation
- Cook pasta and drain pasta, removing ½ cup of cooking liquid
- Heat the oil in a large skillet over medium heat; add the onion, 1/2 tsp each of salt & pepper. Cook, covered, stirring occasionally, until the onions are tender.
- Add garlic and cook for 1 minute.
- Heat broiler. In a bowl mix the sour cream, cream cheese, parmesan cheese, lemon zest, and juice.
- Add this mixture to the onions.
- Add the cooked pasta to the bowl and toss to coat.
- Stir in the spinach and chopped artichokes along with ¼ cup of the cooking liquid.
- Fold in1/2 cup mozzarella.
- Transfer the pasta mixture to a broiler proof 2 ½- 3 qt casserole dish.
- Sprinkle the remaining mozzarella and broil until golden brown.
