Method of Preparation
  • In a medium sized bowl stir in the soup, sour cream, picante sauce and chili powder.
  • In another large bowl stir in 1 cup picante sauce mixture, cheese and chicken.
  • Divide the chicken mixture among the tortillas and roll them up.
  • Place the rolls seam side up in an 11 x 8 in shallow baking dish.
  • Pour over the remaining picante sauce mixture over the tortillas.
  • Cover the baking dish and place in the oven to bake for 40 min or until the enchiladas are hot and bubbling.
  • Remove and top with tomato and onion.
