Broccoli and Spinach Soup

  • 1 Medium size
  • 1 Bunch
  • 2 Tbsp
  • ½ cup

  • 2 ½ cups

Method To Prepare
  • Melt butter in a deep non-stick pan on medium heat. Add oil to avoid burning of the butter.
  • Add leeks and garlic and saute till the leeks turn translucent.
  • Add flour and saute for a minute. Add broccoli and spinach leaves and cook for around three minutes.
  • Add the stock, bring it to a boil, and cook for five minutes on high heat without covering the pan. Strain and cool the entire mixture.
  • Keep the stock aside and blend the broccoli spinach mixture to a fine paste. Mix it again with the stock and add milk to the broccoli spinach paste.
  • Put the pan on a high heat, bring to boil and season with salt, white pepper and nutmeg powder.
  • Garnish with cream and serve hot.
