Broccoli and Spinach Soup
Ingredients
- 1 Medium size
- 1 Bunch
- 2 Tbsp
- ½ cup

- 2 ½ cups
- 1 cup

Method To Prepare
- Melt butter in a deep non-stick pan on medium heat. Add oil to avoid burning of the butter.
- Add leeks and garlic and saute till the leeks turn translucent.
- Add flour and saute for a minute. Add broccoli and spinach leaves and cook for around three minutes.
- Add the stock, bring it to a boil, and cook for five minutes on high heat without covering the pan. Strain and cool the entire mixture.
- Keep the stock aside and blend the broccoli spinach mixture to a fine paste. Mix it again with the stock and add milk to the broccoli spinach paste.
- Put the pan on a high heat, bring to boil and season with salt, white pepper and nutmeg powder.
- Garnish with cream and serve hot.
