Penne with roasted cherry tomato sauce

Method of Preparation
  • Preheat the oven to 220 degrees. Take 1 tbsp of olive oil in a sheet pan and toss tomatoes along with rosemary. Roast untill brown upto 15 minutes.
  • Cook pasta and reserve upto 1/4 cup of water and drain it out.
  • Add tomato mixture, garlic, vinegar, cooked pasta and water to the pot and allow to simmer it for 2 minutes.
  • Add salt and pepper as per the taste. Drizzle with 1 tbsp olive oil and serve it hot.
