Wheat Halwa Or The Renowned Tirunelveli Halwa

Ingredients

Method of Preparation
  • In a bowl, clean and rinse the whole wheat properly. Soak it for a minimum 8 to 24 hours.
  • Rinse the soaked wheat and then grind it in a mixture with a little water. Blend until the wheat becomes coarse paste. Now sieve it and extract the milk in another bowl. Again grind the remaining amount of whole wheat and extract the milk
  • Discard the remaining wheat.
  • Cover the bowl of wheat and allow it to ferment overnight.
  • Take a pressure cooker or a pan and add water and sugar. Cook it on a medium flame and make the consistency like sugar syrup.
  • Add the food color and mix it well.
  • Once the sugar consistency is achieved, reduce the flame and now add the extracted milk, while constantly stirring the mixture.
  • Once the consistency gets thicker, slowly add some cardamom powder and 1 tbsp ghee.
  • Stir for a while until the ghee and milk mix well. Repeat procedure for about 25 minutes until you see the glossy halwa in your pan.
  • Add cashew and again mix well.
