Zucchini Grinders

Ingredients - For Marinara Sauce
  • 1 Tbsp
  • 2 cloves
  • 1 pinch
  • 1 Tbsp
  • 1 tsp
  • 1 tsp
  • 14.5 oz
  • to taste
For Grinders
  • 1 Tbsp
  • 2 medium
  • 1 pinch
  • to taste
  • 1½ cups
  • 4 (6 inch long)
Method of preparation - To make Marinara Sauce
  • Heat oil in a saucepan over medium heat.
  • Now add garlic, basil and red pepper flakes. Cook while stirring until fragrant.
  • Stir in sugar, vinegar, salt and pepper.
  • Pour in the tomatoes with the juices and simmer over low heat for 15 min.
  • Remove from heat and allow to it cool. Now puree until smooth in a food processor.
To make grinders
  • Preheat an oven to 350⁰F / 175⁰C.
  • Melt butter in a skillet, add zucchini and cook until brown and slightly tender.
  • Season with red pepper flakes, salt and pepper.
  • Place a spoonful of the zucchini mixture into each sandwich roll.
  • Cover the sandwich with ¼ cup of marinara sauce per roll and top with a handful of mozzarella.
  • Close the rolls and wrap each individual sandwich in aluminum foil.
  • Bake in oven for 15 minutes or until the bread is heated through, rolls are soft and cheese is melted.
