Enchilada Pasta Bake

Method of Preparation
- Heat oven to 375 F.
- Cook the pasta as per instructions on the packet, omitting salt.
- Meanwhile, in a large nonstick skillet heat oil over medium heat and add to it yellow onions and pepper. Cook for 3 to 5 minutes or until crisp-tender, stirring frequently.
- Now stir in the seasoning mix and diced tomatoes. Cook for 3 minutes while stirring.
- Add chicken, beans and half of the green onions and cilantro.
- Mix well and remove from heat.
- Now drain the pasta and add to the chicken mixture.
- Mix lightly and pour into a 13 x 9 inch baking dish.
- Top with cheese and bake in oven for 20 to 25 minutes or until the pasta mixture is heated through and cheese is melted.
- Sprinkle with remaining green onions and cilantro.
